Tofu “Omelet” with Vegetables

Ingredients (for 1 person):

-100 g smoked tofu (grated)
-½ small red onion, finely chopped
-½ tomato, finely chopped
-½ red or yellow bell pepper, diced

-A handful of baby spinach
-A pinch of turmeric
-1 teaspoon of olive oil
-Salt and pepper to taste
-Whole wheat toast or crackers for serving (optional)

Preparation:

Heat the olive oil in a pan, then briefly sauté the onion until softened (you can also use water instead of oil
). Add the pepper, tomato, and spinach and sauté for 2-3 minutes until the vegetables soften slightly. Add
the grated smoked tofu, sprinkle with turmeric, add a little salt and pepper to taste. Mix everything together
and sauté for another 2-3 minutes until the ingredients are well combined and the tofu takes on a nice yellowish color from the turmeric.
Serve warm with whole wheat toast or crackers as desired. You can further garnish with fresh herbs
(parsley or chives).
