Spaghetti Bolognese with Soy Granules

Ingredients (for 2 servings):

-150 g whole wheat spaghetti
-80 g soy granules
-1 can of peeled tomatoes or 2 fresh tomatoes
-1 carrot (grated or finely chopped)
-½ red onion (finely chopped)
-2 cloves of garlic

-1 teaspoon of oregano or basil
-1 tablespoon of olive oil
-Salt and pepper to taste
-Fresh parsley for decoration

Preparation:

Soak the soy granules in warm water for 10 minutes, then drain well. Heat the olive
oil in a deep frying pan, add the red and white onion and sauté briefly. Add the soy granules and grated carrot, simmer for 3-5
minutes. Add the peeled tomatoes or chopped fresh tomatoes, oregano, salt and pepper to taste. Simmer the sauce over low
heat for about 10-15 minutes until well combined. Cook the spaghetti according to the instructions on the package, drain and
mix with the finished sauce.
