Protein Salad with Chickpeas and Avocado (Vegan)
Ingredients:
1 cup cooked chickpeas
½ avocado, chopped
1 handful arugula or salad mix
5–6 cherry tomatoes, halved
¼ red onion, thinly sliced
Olive oil (1 tablespoon)
Juice of ½ lemon
Salt, pepper, turmeric or ground cumin to taste
(Optional: a tablespoon of pumpkin or sunflower seeds for extra crunch)
Preparation:
Gently mix all ingredients, season with olive oil and lemon. Serve fresh, and you can add
whole grain toast on the side.
