Mediterranean Salad with Beans and Olives
Ingredients:
-200 g white or red beans (canned, drained)
-1 fresh cucumber, diced
-150 g cherry tomatoes, halved
-50 g pitted black olives, sliced
-1 small avocado, diced
-1 small red onion (optional)
-a handful of fresh parsley or basil
Dressing:
-3 tablespoons olive oil
-juice of 1 lemon
-1 teaspoon mustard
-½ teaspoon garlic powder or 1 clove finely chopped
-salt and pepper to taste
Preparation:
In a bowl, combine the drained beans, cucumber, tomatoes, avocado, olives, and red onion. In a separate bowl,
whisk together the olive oil, lemon juice, mustard, garlic, salt, and pepper. Pour the dressing over the salad, gently
toss, and sprinkle with chopped parsley or basil.
