Baked zucchini stuffed with vegetables and smoked tofu:
Ingredients:
-2 medium zucchini
-150 g smoked tofu
-1 red bell pepper
-1 tomato
-1 small onion
-2 cloves of garlic
-2 tablespoons olive oil
-Salt, pepper, oregano or basil to taste
-Fresh parsley for decoration
Preparation:
Wash the zucchini, halve lengthwise, carefully scoop out the middle with a spoon and set aside. Finely chop the smoked tofu,
pepper, tomato and onion into cubes, and mince the garlic. Heat olive oil in a pan,
briefly sauté the onion and garlic, then add the pepper, tomato and the scooped-out part of the zucchini. Season everything to
taste. After 5-6 minutes, add the chopped smoked tofu, stir and simmer for another 2-3 minutes. Spoon the filling
into the hollowed zucchini halves and arrange them on a baking sheet lined with baking paper. Bake in a
preheated oven at 200°C for about 20 minutes, until the zucchini is soft and slightly golden.
