Vegan vegetable stir-fry with tofu and cashews

Ingredients (for 1 person):

-100 g firm tofu (diced)
-A handful of broccoli
-Half a bell pepper, sliced into strips
-Half a zucchini, diced
-Carrot, thinly sliced
-2 tablespoons of cashews
-Soy sauce, ginger powder, garlic
-A teaspoon of coconut or sesame oil
-Brown rice (50 g dry)

Preparation:

Fry the tofu in oil until golden brown, add the vegetables, and season with soy sauce, ginger, and garlic. Add the cashews towards the end, and serve with brown rice.
