Drain the cooked potatoes, add<br \/>\nplant-based milk, olive oil, a little salt, and pepper, and mash into a creamy puree. Season the salmon with salt, pepper,<br \/>\ngarlic powder, and drizzle with the juice of half a lemon. Heat a pan and cook the salmon on both sides for<br \/>\n3-4 minutes until it gets a nice, crispy crust. Prepare the salad from baby spinach, add cherry<br \/>\ntomatoes, season with olive oil, lemon juice, and a little salt.
